Kaju Katli / Mundhiri cake


Kaju Katli is one of the famous sweet in India. It was in my trying list for longtime finally the day came tried yesterday and vanished with in few hours. Yep it’s our family’s favorite sweet I know I need to do next batch but didn’t expect immediately. I tried this following Rak’sKithchen recipe, oh! I love her passions and detailed explanation.  

Ingredients:


Cashew nut
1 cup
Sugar
½ cup heaped
Water
¼ cup
Ghee
1 tsp
Yields 20 pieces
 
 
 

 

Directions:


  1. Grind the cashew to course powder (like rava) sieve and measure 1 cup heaped.
  2. In a pan, add sugar and water and start to cook, bring it to one string consistency (takes 8-9 minutes).
  3. In this stage add the cashew powder and reduce the flame to low.
  4. Keep on stirring for 4-5 minutes. In this stage the mixture will starts to bubble and thicken. Now turn off the stove and keep stirring for another 2 minutes.
  5. Now transfer to a clean surface and knead the mixture to soft dough (careful the dough will be hot).
  6. Apply ghee in a tray and roll the dough in that, cut into desired shape and enjoy.

 
 
Note: I used coffee grinder for grinding cashew. If your using mixe try small quantity at one time.
