Pattani Vadai(Dry Green peas Vadai)

Usually my mom use to do vadai with vada parrupu(split pegion dal). Which is nothing but skin removed split dry green peas. Here its not available in all stores. So i tried with pattani which is even good for health.


Ingredients:




Pachai pattani(Dry green peas)
1 Cup
Onion (chopped)
½ Cup
Green Chili
1-2
Ginger Chopped
1 tsp
Fennel Seeds
1 tsp
Asafetida
a pinch
Salt
 
Oil for deep fry
 
Curry leaves
 
Cilantro
 
 
 
 
 
 







 
 
 

Directions:


  1. Soak pattani for 3-4 hours.
  2. Grind pattani, green chili, ginger, fennel seeds, asafetida and salt with little water into a course paste.
  3. To that add finely chopped onion, curry leaves and cilantro.
  4. Make small balls and flatten them.
  5. Heat oil in kadai and deep fry like those flatten balls until golden brown.
  6. Serve with coconut chutney or payasam.

 

Peas Pulav

Its once of the easy recipe can be done in 30 minutes.


Ingredients:




Basmati Rice
1 Cup
Peas
½ Cup
Coconut Milk
½ Cup
Onion
½ Cup
Bay leaves
2
Anistar
2
Clove
3-4
Cinnamon
1 inch
Ginger Garlic paste
½ Tbsp
Green Chili
1
Mint
few
Ghee
1 Tbsp
Oil
1 Tbsp                                       
Salt
 
 
 
 
 















 


 
 

Directions:


  1. Soak rice for ten minutes.
  2. In pan heat oil add bay leaves, anistar, clove, cinnamon fry them until nice aroma comes out.
  3. Add green chili, mint and onion after it turns light pink add ginger garlic paste.
  4. Once the raw smell goes add peas salute fro few minutes.
  5. In pan heat ghee add soaked rice after draining all water, fry until water evaporates or rice turns hot.
  6. Now put everything in rice cooker add coconut milk, 1 ½ cup water and salt.
  7. Wait until it cooks and serve with any gray.

  

Note: If using pressure cooker reduce ¼ cup of water. I used reduced fat coconut milk.

Thatta Payir Kathirikai Kulambu

I Saw this recipe from a blog and tried it came out well. It tastes like fish kulambu. When, I told my mom about this she told another recipe of similar kind. Yet to try that. I love Indian egg plant missing those now days. Whenever I get chance, use to buy lot and store in freezer.

Ingredients:

Eggplant

Thatta payir(Cowpeas)
½ Cup
Onion(Chopped)
¼ Cup
Tomato(Chopped)
¼ Cup
Tamarind
small gooseberry size
Garlic pods
4
Sambar powder
½ Tbsp
Coriander powder
½ Tbsp
Turmeric powder
½ tsp
Chili powder
½ tsp
Mustard seeds
½ tsp
Green Chili
1 or 2
Curry leaves
 
Salt
 
Oil
 
 
 










 





Directions:

 
  1. Soak Tamarind in water make a thick pure. Pressure cook Thatta payir with a pinch of turmeric & few drops of oil.
  2. Cut eggplant into four (how you cut for stuffing) sprinkle chilli powder and salt into it.
  3. In a pan with a table spoon oil fry those eggplants until it cooks (skin should change light brown) Keep it aside.
  4. In same pan add some oil splutter mustard seeds add onion green chili and curry leaves.
  5. Once the onion cooks add tomatoes wait until that cooks, now add cooked eggplant give a stir add tamarind pure.
  6. When it starts to boil add all powders and crushed garlic. Once the raw smell goes add cooked thatta payir salt.
  7. Let it boil for few minutes. Once it’s done serve with rice.
 
Note: When cooking Thatta payir it should not but mushy. Will cook in 5-6 whistle.

Sambar


This is one of the important dish in Tamil Nadu. It goes with rice, idli, dosa, pongal, upma.


Ingredients:


Toor dal
½ cup
Tamarind
big gooseberry size
Onion Chopped
½ cup
Tomato
½ cup
Drumstick
10 pieces (2 inches)
Turmeric powder
¼ tsp
Sambar powder
1 tsp
Chili powder
¼ tsp
Fenugreek seeds
¼ tsp
Mustard seeds
¼ tsp
Green Chili
1
Curry leaves
 
Cilantro
 
Salt

Directions:


  1. Pressure cook Toor dal until mushy, Drain the water and mash that. Soak tamrind in water and make thick pure.
  2. Heat oil in a pan, splutter mustard seeds and fenugreek seeds, once that turns brown add onion, green chili, curry leaves, cilantro.
  3. After onion turns translucent add tomatoes wait until it cooks.
  4. Now add drumstick and give a stir, add tamrind pure cook until raw smell goes, add all powders and let it boil once.
  5. Add the mashed toor dal and salt enough water. Wait until the drumstick cooks finally add some cilantro and turn off.
  6. Serve with Rice, dosa, idli, etc.
 
Note: Instead of drumstick you can add other vegetables like radish, carrot, potato,eggplant,pearl onoin. Each vegetable give different taste.

Palapaniyaram

This is one of the easiest sweet, can be prepared with in 20 minutes. One of my kids favorite sweet even I like this a lot my mom use to do this often. Whenever I have ripped bananas I use to do this.


Ingredients:



All purpose flour
1 Cup
Sugar
¾ Cup
Banana ripe
1 Medium size
Shredded Coconut
2 Tbsp
Cardamom powder
a pinch
Baking soda
¼ tsp
Oil
 












 



Directions:


  1. Mash the banana, add all the ingredients expect oil mix everything together with water.
  2. Batter should be thick (should drop from spoon).
  3. Heat oil, Scoop with spoon and drop in oil and deep fry until golden brown.

  
Note: Check for sugar, you can even make it to 1 cup if you are sweet toothed. You can add Cashew nut or chutney dal.

Stuffed Milagai Baji


This year I planted different type of chili’s in our backyard. I got lot of banana pepper, so I decided to try something stuffed in those chilis. Hope potato will go good with that, yep it’s a good combination.


Ingredients:


Baji chili/Banana pepper                     6-8
Oil for deep fry


For Stuffing:

Potato (1 inch cubed)
1 Cup
Carrot (Shredded)
½ Cup
Onion (Chopped)
¼ Cup
Green Chili
1-2
Gram masala
1 tsp
Salt
 

 
 
 
 
 
 
 
 
For Batter:

Besan flour/Chickpeas flour
½ Cup
Rice flour 
2 Tbsp
Red chili powder
1 Tbsp
Baking soda
¼ tsp
Salt
 








 
 
  

Directions:


  1. Cook potato separately and mash it. In a pan heat one Tbsp oil add onion and green chili cook until onion turns golden brown. Now add carrot salt and potato wait for few minutes then turn off and allow to cool down.
  2. Meanwhile prepare the batter; add all the Ingredients for batter mix with enough water, it should be like dosa batter.
  3. Slit the chili’s remove the seeds from it( use back side of the spoon to remove seeds).
  4. Stuff the potato mixture into chili’s, dip in the batter and deep fry in hot oil until golden brown.
  5. Serve with tomato sauce or with chutney.

Apple Kesari

Went to apple farm couple weeks ago, my kids like apple sauce when I was doing that, thought even I can try apple kesari. It came out good.

Ingredients:

Soji/rava
1 cup
Apple sauce
2 cup
Sugar
¾ cup
Water
3 cup
Ghee
3 Tbsp
Cashew nut
1 Tbsp
Raisin
1 Tbsp
Cardamom powder
a pinch








 
 
 
 
 
 

Direction:

  1. In one tablespoon ghee roast cashew nut, raisin and rava until the aroma comes. Allow the mixture to cool.
  2. In another pan boil water, when it starts boiling add rava mixture once it cooks; add apple sauce, sugar, remaining ghee and cardamom powder.
  3. Let it cook for few more minute.
Note: How to make apple sauce?
          Take 2 medium size apples, peel the skin and remove seeds. Cut into pieces, with a table spoon water cook for 10 minutes allow to cool and grind into fine paste.
