Varutha Arusi Inipu Puttu (Roasted Rice Sweet Puutu)

This is one of the main sweet my mom and grandma use to do during pongal. I am not a great fan of this, after long time had a craving for this sweet puttu. Got the recipe from my mom and tried yesterday, came out good. She uses to do this puttu in bajiri (kambu) also but its bit risky so gave my first try in rice will soon try kambu version. Thanks for Gayathri giving a nice opportunity that too in right time, to thank my mom and post her recipe.

Ingredients:

Rice
1 cup
Sugar
½ cup
Cardamom powder
¼ tsp
Coconut shredded
2 Tbsp
Water
1 cup approximately

Direction:

  1. Dry roast rice until nice aroma comes (Rice will be white and start to turn brown) remove from heat and cool down.
  2. After it cools grind to fine powder and sieve. Add boiling water to one cup of rice flour (add little by little) and mix well. It should not be sticky or too dry don’t make like dough.
  3. Steam cook, this mixture for 10 minutes. Remove and add sugar, cardamom powder and coconut. Serve with banana.

Yummy puttu Manju. I think roasting the rice increases the flavour of puttu...
