Red Velvet Whoopie Pies


I am back after a week vacation with friends and kids. My kids like this whoopie pies a lot came across this in a magazine. I tried this for Christmas and enjoyed but took a long time to share with you people. This is the first time I am trying cream cheese,  It tasted bit sour so I didn’t like the filling much but my kids loved it. Planning to redo this with some other filling will post soon.

Ingredients:


All purpose flour
1 ¾ cup
Unsweetened cocoa
½ cup
Baking soda
½ tsp
Brown sugar
1 cup (packed)
Unsalted butter
½ cup (room temp)
Egg
2 large
Vanilla extract
1 tsp
Red liquid food color
1 Tbsp
Butter milk
½ cup
Salt
½ tsp
Cream cheese
8 oz(room temp)
Marshmallow cream
1 cup

Directions:


  1. Preheat the oven to 375ºF.Prepare your baking sheet. In a bowl, mix together flour, cocoa, backing soda and salt.
  2. Using an electric mixer, beat sugar and butter in another bowl until light and fluffy, about 3 minutes.
  3. Beat in the eggs, then vanilla and food color. Alternately add the flour mixture and butter milk, mix well.
  4. Drop level Tbsp of the batter onto the prepared baking sheets, spacing them 2 inches apart, Bake until the tops are set approximately 8- 10 minutes.
  5. Cool on the baking sheet for 5 minutes, then transfer to a wire rack for complete cooling.
  6. Meanwhile we will prepare the filling, using an electric mixer beat the cream cheese until smooth. Add marshmallow cream and beat until fluffy, about 3 minutes.
  7. Spread level Tbsp of filling onto half of the cookies then sandwich with the remaining cookies.
  8. Serve immediately or refrigerate for 5 days.
