I am back after a week vacation with friends and kids. My
kids like this whoopie pies a lot came across this in a magazine. I tried this for
Christmas and enjoyed but took a long time to share with you people. This is the first time I am trying cream cheese, It tasted
bit sour so I didn’t like the filling much but my kids loved it. Planning to
redo this with some other filling will post soon.
Ingredients:
All purpose flour

1 ¾ cup

Unsweetened cocoa
|
½ cup

Baking soda
|
½ tsp
|
Brown sugar
|
1 cup (packed)
|
Unsalted butter
|
½ cup (room temp)
|
Egg
|
2 large
|
Vanilla extract
|
1 tsp
|
Red liquid food color
|
1 Tbsp
|
Butter milk
|
½ cup
|
Salt
|
½ tsp
|
Cream cheese
|
8 oz(room temp)
|
Marshmallow cream
|
1 cup
|
Directions:
- Preheat the oven to 375ºF.Prepare your baking sheet. In a bowl, mix together flour, cocoa, backing soda and salt.
- Using an electric mixer, beat sugar and butter in another bowl until light and fluffy, about 3 minutes.
- Beat in the eggs, then vanilla and food color. Alternately add the flour mixture and butter milk, mix well.
- Drop level Tbsp of the batter onto the prepared baking sheets, spacing them 2 inches apart, Bake until the tops are set approximately 8- 10 minutes.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack for complete cooling.
- Meanwhile we will prepare the filling, using an electric mixer beat the cream cheese until smooth. Add marshmallow cream and beat until fluffy, about 3 minutes.
- Spread level Tbsp of filling onto half of the cookies then sandwich with the remaining cookies.
- Serve immediately or refrigerate for 5 days.
