This sambar can be prepared very fast and a
tasty one. One of my friend told they use to do sambar with moong dal. I tried
that with different combinations and it came out well.
Ingredients:
Perkangai ( Ridge
Gourd) chopped

Moong dal

Turmeric powder

¼ tsp

Sambar powder

Mustard seeds

Asafetida

Curry leaves

|
Directions:
- Dry roast moong dal until nice aroma comes. In a pressure cooker add chopped onion, perkangai, tomatoes, green chili, turmeric powder and dal.
- Add water until everything immerse cook for 3-4 whistles, once the pressure released open and add chili powder, sambar powder and salt.
- Allow it to boil meantime in a pan splutter mustard seeds, asafetida, urad dal, fenugreek and curry leaves.
- Add this mixture to boiling sambar check salt and consistency. Wait for few minutes add cilantro and turn off the stove. Serve with Idli and dosa.
Note: Instead of perkangai you can add kathirikai(egg plant)
also.
