Pumpkin Bread


Pumpkin bread is today’s recipe from King Arthur Flour Whole Grain Baking book. When I first saw this name I thought it’s some thing new from our regular bread, but after reading the recipe found it, it’s a tea time snack. I was left with half a tin of pumpkin and thought it will be good to start my morning with a healthy food like this. I am a lazy person to prepare breakfast for myself, thought this will go perfect for me. Yep it’s complete filling, healthy Breakfast with a cup of milk or coffee. Hope this will help lot of people like me, will come back soon with more recipe like this.

Ingredients:


Whole wheat flour
2 cups (8 oz)
Baking powder
½ tsp
Baking soda
1 tsp
Salt
½ tsp
Nutmeg powder
¼ tsp
Cinnamon powder
½ tsp
Brown sugar
1 cup (7 ½ oz)
White sugar
¼ cup
Butter
½ cup (4 oz)
Canned pumpkin
1 cup (9 oz)
Vanilla extract
1 tsp
Eggs
3
Raisins
¼ cup
Walnut
¾ cup
Chocolate chips
¼ cup
 
 
 

 

Direction:


  1. Preheat the oven to 350ºF. Grease a 10×5 inch pan.
  2. Combine flour, baking soda, baking powder, salt and spices in a bowl.
  3. Cream together the butter and sugar in another bowl until light and fluffy. Beat in eggs one at a time, stopping and scrapping the sides.
  4. Beat in vanilla and pumpkin. Now add flour mixture, mix well until evenly moistened.
  5. Stir in the nuts, raisins and chocolate chips.
  6. Pour in the batter into prepared pan, and bake for 1 hour. Cool for 15 minutes and slice that to 12 pieces.
Note:
You can make this as muffins too.
For this recipe I used oz for measuring, I have read before when measuring in cups and scales always varies, that too when coming for flour for best result follow oz measuring.

Multigrain Roti


One of my friend said the store brought multigrain roti flour was not good. Apart from wheat and rice it’s always good to add some grains in our routine life. I use to do oats roti thought of adding other flours too turned out good. My kids like roti, now it’s healthy too.

Ingredients:


Wheat flour
1 cup
Oats flour
2 Tbsp
Bajiri (Kambu) flour
2 Tbsp
Sorgam (Cholam) flour
2 Tbsp
Ragi flour
2 Tbsp
Oil
2 -3 Tbsp
Water
¾ cup (approximately)
Sugar
A pinch
Salt


Directions:


  1. Mix all the dry ingredients together, add Luke warm water little by little and knead the flour (10 – 15 minutes) to soft dough.
  2. Now add oil and mix well don’t knead for longtime now.
  3. Let the dough rest for 1 hour. Make small balls and roll to flat circle and toast on hot tava.
Note:
You make variations by adding different flours. But maintain the same ratio.

Orange French Toast

My kids like French toast, in a stage they got bored thought of adding new flavor to toast but don’t want to leave egg it’s their favorite, and then ended up in Orange French Toast.

 

Ingredients:



Bread
2 slice
Orange juice
2 Tbsp
Cinnamon powder
¼ tsp
Sugar
1 tsp
Egg
1
Ghee/ Butter
1 tsp
Orange zest (Optional)
¼ tsp
Honey/ Syrup
 
 
 
 
 

 

Directions:


  1. Beat egg in bowl, Add cinnamon, sugar, orange zest and orange juice mix well. Cut the sides of bread and dip them in egg mixture.
  2. Toast on hot tava with few ghee. Serve hot with honey or syrup topping.
 

Note:

Instead of sugar you can add honey.
If you need spicy, instead of sugar add salt and pepper and serve with ketchup.

Tri Color Mushroom Roll


Ingredients:



Mushroom
8oz pack
Onion
1 medium size
Ginger Garlic paste
1 tsp
Coriander powder
1 Tbsp
Pepper
1 Tbsp
Salt
 
Oil
 












Directions:






First prepare  tri color chapatti/roti.  ( Follow the link)

 

Heat oil in add mustard seeds once it splutter add onion sauté for few minutes. Now add ginger garlic paste and sauté until raw smell goes. Then add mushroom wait for few minutes once it turns soft add coriander powder, half part of pepper, turmeric powder and salt wait until mushroom cook. Add remaining pepper and turn of the stove. Take a scoop or 2-3 table spoon mushroom and place on the roti.
 
Fold the sides inside and roll from one end to the other.
 
 

Tips:

Instead of mushroom you can use cauliflower or mixed vegetables finely chopped or grated.
Make sure your mixture should not be watery.
You can add gram masala too. Since I prepared for kids I dint add that.
You can serve with any kind of ketchup.

Tri Color Chapati

This Chapati will be colorful and kids will love it. Hope most of us have hard time to feed kids. I have lot of experience in this but my kids like chapati, so to attract them thought of doing colors and its healthy too no need to feed veg separately.

Ingredients:


Wheat flour
3 Cups
Spinach pure
½ Cup
Tomato pure
½ Cup
Water
½ Cup
Oil
3 tsp
Salt
 












Directions:


Take 2 hands full of spinach cook that with little water for 10 minutes and grind that to fine pure.Take 2 medium sizes ripe tomatoes boil for 10 minutes peel the skin and blend that to fine pure.
  
 
Divide the wheat flour into three parts. For one portion add spinach pure and 1 tsp oil and mix and make soft dough. Second portion add tomato pure and oil make soft dough. To the third portion add water and make regular chapati dough. Put them in Air tight container and rest for 2 hours.
 
 

After 2 hours take the dough and roll to big circle with ¼ inch thickness. Do this for all the colors. Then keep one over the other and make three layers as shown.



Now roll that from one end to other and make like a wrap seal the side (just press the dough inside).

 
Next pull both the ends and also roll the dough from center to sides, to elongate the dough.
 
 
Now cut them into pieces. Take one piece and again roll that to thin circle.



Toast the rolled one on hot tava and serve with any gravy.
 
 
  
 
Tips:

  • Depending on the flour the water measurement might change I used Aashirvaad atta flour. Mine stayed soft until next day.
  • If your chapatti is hard add ghee or oil while toasting it.
  • Don’t keep the dough in air for long time. As soon as you spread that put that on hot tava but not super hot.

Spinach Chapati and Thakali Tokku

My kids don't take much greens in their food but they like chapati, so I tired this turned out good with beautiful green color and they liked it. Thakali Tokku is one of the easy recipe and its our favorite. We can use this for travel. My mom always do this for dinner when we travel,such a good combination.


Spinach Chapati(Indian wheat bread or tortilla)


Ingredients:
 
Wheat flour
1 Cup
Spinach pure
½ Cup
Oil
1 Tbsp
Salt
 
Water
 
 
 
 
 
 
 
 
 Directions:

  1. Spinach pure: Cook 2 cups spinach with little water for 10 minutes and blend.
  2. Add everything together expect oil, mix and make a soft dough. Now add oil and knead it for 10- 15 minutes. Keep it aside for 1-2 hrs. After that make small balls out of it. Take one ball and roll it and toast both sides on hot pan. Chapati is now ready.
 

 

Thakali Thokku 

 
Ingredients:

Onion Chopped
½ Cup
Tomatoes medium size
3
Green Chili
1
Turmeric powder
½ tsp
Red chili powder
½ tsp
Mustard seeds
1 tsp
Oil
2 Tbsp
Salt
 
Curry leaves
 










 

 
Directions:

  1. In a pan heat oil. Add mustard seeds once it splutters add onion, green chilli and curry leaves.
  2. After the onion turns brown add the chopped tomatoes, Turmaric powder, chilli powder and salt.
  3. Cook with out covering the lid until oil separates.  
Note: You can add a pinch of sugar to thokku it tastes good. When travel aviod onion for thokku it will saty good for 2 days.
