Orange Carrot Jiuce


Now only summer started here but it’s already too hot to go out, need lot of fluid that too for kids they always need something new. Last time when we went to shopping, found Florida sweet orange and bought a huge box, my kids favorite fruit. Daily tried different flavored orange juice in that orange and carrot combination turned out so good. For the second day of cooking with colors I choose orange and carrot, no other combination will bring this bright orange color.
 
 
 

Ingredients:


Fresh Orange Juice
1 cup
Fresh Carrot Juice
1 cup
Lemon Juice
½ Tbsp
Mint leaves crushed
4-5
Ice cubes
¼ cup
Honey
1 Tbsp
 
 
 

 

Directions:

  1. Take one cup fresh orange juice (I used 2 oranges for this).
  2. Peel carrot and chop roughly using ¼ - ½ cup water blend that well and filter the juice.
  3. In a big mixing bowl add both juices with honey, lemon juice and ice cubes, give a nice stir. Finally add crushed mint and serve. If needed you can refrigerate and serve.

Almond Mango Shake

Summer will not complete without a shake, mango will be the best one for summer. But in our home there is no season for this mango shake even in winter, now it became my kid’s favorite too. To add a healthy touch added almonds this time even my husband didn’t realize it.


Ingredients:


Mango Pulp
1 cup
Milk
1 cup + ¼ cup
Sugar (optional)
2 tsp
Almond
2 Tbsp
Ice cubes
few
 
 
 


 

Directions:

  1. Soak almonds for 2 -3 hours, remove the skin and grind to smooth fine paste using ¼ cup of milk.
  2. Add this almond mixture, mango pulp, milk and ice cubes in a blender and blend until every thing is evenly mixed.
  3. If needed add more ice when serving.
 

Note:
I used tin mango pulp, you can use fresh mango also.

Pineapple Smoothie

Finally we got few signs of spring, as the season changes our food also changes, yep after couple hours of cleaning we all need smoothing to drink. Tried this pineapple smoothie it tastes great with coconut milk. Don’t substitute coconut milk, with milk (milk will curdle)and sugar is optional.
This is my first post for Show Your Style to the World Series conducted by Viji.

Ingredients:


Pineapple (cubed)
1 cup
Banana (sliced)
¾ cup
Sugar (optional)
2 Tbsp
Coconut milk (thick)
½ cup
Crushed ice
1 cup
 
 
 

 

Directions:

Add all the ingredients in blender and blend until everything mix well.
You can add more ice if you need a running consistency.

Kambu Koozh / Pearl Millet Porridge


Kambu koozh is one of the famous street foods during summer. It is usually stored in a large mud pot (natural refrigerator) it also give unique taste. Since we don’t have mud pot we can store this in refrigerator with water, even the water is healthier one. My kids love these type of koozh, if they didn’t like the koozh just give them the water alone instead of juice or plain water its healthy.

Ingredients:


Kambu Arrusi
1 cup
Water
3 cup
Curd
1 cup
Salt
as per taste



Directions:


  1. In heavy bottomed vessel heat water, when water is boiling, add kambu rice and cook by closing the lid halfway.
  2. Keep stirring occasionally, when the rice is cooked all the water will be absorbed.
  3. When it’s warm enough to hold make small balls out of that (3-4 balls).
  4. Add cold water to this balls and store in refrigerator. Next day take the balls add curd and mix well without lumps. Add salt and water (which is used to soak the balls) mix well and serve with small onion and green chili.


Note:
I bought kambu arrusi from India during my last visit. But here I didn’t find one like that, don’t worry if you have regular kambu sprinkle water and using mixe broke it. It should be broken into course powder (like broken wheat).

Hot Tea


Tea is one of the important beverages in India. People use to drink for refreshment and there are lots of health benefits also.

Ingredients:


Milk 1%
¾ cup
Water
¼ cup
Sugar
2 tsp
Tea dust
2 tsp
 
 
 

 

Directions:

 
Heat water in a sauce pan when water starts to boil add tea dust and boil for 2 minutes.
 
 
Now add milk and sugar wait until milk boil and forming. Now reduce the heat to low and allow it to boil for a minute. Stir once or twice in between.
 
 
 
 
Filter the tea dust and serve hot.
 



Tips:

You can use 2% milk also make ½ cup water and ½ cup 2% milk.
If you like you can add spices also when you add tea dust add a pinch of cardamom and cinnamon powder with ¼ tsp of crushed ginger.
You can also use tea bags. Reduce the boil time 1-2 minutes. When the tea dust is small boiling time will be less when its big need more time to boil.
