Pizza Dosa


Pizza is always an attracting food for kids. My kids love to eat cheese, when ever I make pizza or quesadilla before they start their meal they use to fill their tummy with cheese. One of my friend tried this just with cheese and olive, kids loved it. I thought of adding punch and more flavors. You can add any kind of topping but don’t forget to use pizza sauce it enhances the taste.

Ingredients:


Dosa Batter
1 cup
Pizza sauce
2 Tbsp
Olive
2 Tbsp
Green bell pepper
2 Tbsp
Onion
2 Tbsp
Jalapenos
few
Tomatoes
1 Tbsp
Mozzarella cheese
½ cup + 1 Tbsp
Oil
 
Salt
 
 
 

 

Directions:


  1. Heat the tava, pour dosa batter don’t spread (do like big uttapam).
  2. Drizzle pizza sauce all over and cover with cheese (a thick layer) reduce the flame to low, now top with vegetables and sprinkle a pinch of salt. Again sprinkle another hand full of cheese (don’t over as you done before).
  3. Add few drops of oil to the sides, cover a lid and cook for 5 minutes or until the cheese melts. Keep an eye on bottom part of dosa it should not burn.
 
Note:
You want to be really fast while adding pizza sauce, cheese and topping or else the dosa might burn.

Thinai Arisi Takali Dosai / Quinoa Tomato Dosa

Ingredients:


Thinai Arisi Quinoa
1 cup
Tomatoes
2-3 small size
Rice flour
½ cup
Besin flour (Kadalai Mavu)
½ cup
Garlic pods
2-3
Curry leaves
few
Cumin powder
2 tsp
Pepper powder
2 tsp
Asafetida
¼ tsp
Salt
as per taste
Oil
 
 
 

 
 

Directions:

  1. Soak quinoa for 2-3 hours.
  2. Heat oil in a kadai, add garlic, chili and chopped tomatoes cook until tomatoes turn soft. Now add soaked quinoa and mix well. Turn off the stove. After it cools grind to smooth paste.
  3. Add rice flour, besan flour to this ground paste mix well, add enough water (consistency should be like dosa batter).
  4. Add cumin powder, asafetida, pepper powder and salt mix well again. And make dosa on a hot a tava. Enjoy with any chutney.

Sorghum (Coolam) Dosa


Sorghum (Coolam) is one of the main grains grown in India and it’s healthy when compared to rice. Few months before I started to explore substitution for rice, here is my first Sorghum (coolam) dosa as a result, my grand parents use to take these type of grains (kambu, coolam, ragi, thinai, saamai, etc.) a lot hope that’s the reason they are strong even in old age.

Ingredients:


Sorghum (Coolam)
1 cup
Raw rice
1 cup
Idli rice
1 cup
Urad dal
½ cup
Cumin powder
1 Tbsp
Pepper powder
1 Tbsp
Asafetida
A pinch
Salt
 
Oil or ghee
 
 
 

 

Directions:


  1. Soak coolam for about 12- 18 hours, soak both rice together for 5-6 hours and urad dal for 2 hours.
  2. Grind urad dal separately; grind coolam and rice together as a course paste.
  3. Mix everything together with enough salt and ferment overnight.
  4. Before you make dosa add cumin powder, pepper powder and asafetida mix well and make dosa on hot tava.
  5. Enjoy with any chutney or sambar.
 
 


Note:
  • Instead of coolam you can use Bajiri (kambu) or Barley.
  • My urad dal use to raise a lot. So I used ½ cup you can add ¾ or 1 cup (My ratio for normal idli and dosa is 4 cup rice for ½ cup urad dal). I use wet grinder for grinding .
  • While you are soaking the uard dal leave that in refrigerator and grind using that cold water it helps to raise urad quantity.

Poosanikai (Ash Gourd) Dosa


Ash Gourd or poosanikai is 96% water based fruit. It’s good for weight loss and ulcer patients. And especially for women it’s so good.

Ingredients:

Dosa batter
2 cups
Ash Gourd/Poosanikai cubed
½ cup
Cashew nut
10
Garlic pods
2
Red Chili
1-2
Turmeric powder
¼ tsp
Pepper powder
½ tsp
Oil
1 tsp


 

Directions:


  • Heat oil in a pan add garlic and chili fry for a minute. Now add cashew nut, turmeric powder and poosanikai cook until it turn soft. After cooling grind it to a fine paste.
  • Mix the ground paste, pepper powder to dosa batter.


Make poosanikai dosa as you do regular dosa. Serve with any chutney or sambar.

Waffle Dosa

This waffle dosa was a big hit when I tried first, even adults loved this a lot. Instead of doing same dosa, panniyaram, oothappam it’s different in shape and attracting kids.

 

Ingredients:




Dosa Batter
2 Cup
Onion Chopped
½  Cup
Green Chili
1
Mustard Seeds
1 tsp
Split Urad Dal
1 tsp
Split Channa Dal
1 tsp
Curry leaves
 
Cilantro
 
Salt
 
Oil
 
 
 
 

 
 


Directions:


1.      Heat oil in a pan splutter mustard seeds, urad, and channa dal.
2.      Add onion, green chili, curry leaves and cilantro.
3.      Add this to dosa batter with little salt and mix them well
4.      Heat the waffle maker, pour this batter in that and make dosa waffle.
 


 
Note: Best results if using rotating waffle maker.
