Chapati Noodles


Kids usually have an attraction for noodles, when I have some left over chapatti I use to try this chapatti noodles or chili chapatti. Its simple and quick, kids will also feel a variety in food. This need to be served immediately, after few hours I felt it’s hard to eat, need to find a way to make it a lunch box recipe.

Ingredients:


Chapatti / Roti

Onion
1 small size
Carrot
1 small size
Beans French cut
¼ cup
Green bell  pepper
¼ cup
Cabbage
½ cup
Tomato paste
1 Tbsp
Soy sauce
¼ tsp
Chili sauce
½ tsp
Green chili
1
Ginger garlic paste
1 tsp
Pav Baji masala / Garam masala
1 tsp
Salt
 
Oil
 
 
 

 

Directions:


  1. Cut the chapattis in to thin noodles, cut all the vegetables also lengthwise.
  2. Heat oil in a pan, add onion, ginger garlic paste and sauté until raw smell goes, and now add tomato paste fry for 2 minutes next add all vegetables sauté until they turn soft.
  3. Add enough salt and cook covered until vegetables are cooked, in this stage add garam masala, soy sauce, chili sauce and fry for one or two minutes.
  4. Next add chopped chapattis and mix well, serve with ketchup or any rita.
Note:
  •  I use to add vegetables more, if you feel its more you might reduce and any combination will be fine.
  • Instead of tomato paste you can add tomato pure or fresh tomatoes.
  • If you like egg, you can make omelet and cut that like noodles and them when you add chapatti.

Multigrain Roti


One of my friend said the store brought multigrain roti flour was not good. Apart from wheat and rice it’s always good to add some grains in our routine life. I use to do oats roti thought of adding other flours too turned out good. My kids like roti, now it’s healthy too.

Ingredients:


Wheat flour
1 cup
Oats flour
2 Tbsp
Bajiri (Kambu) flour
2 Tbsp
Sorgam (Cholam) flour
2 Tbsp
Ragi flour
2 Tbsp
Oil
2 -3 Tbsp
Water
¾ cup (approximately)
Sugar
A pinch
Salt


Directions:


  1. Mix all the dry ingredients together, add Luke warm water little by little and knead the flour (10 – 15 minutes) to soft dough.
  2. Now add oil and mix well don’t knead for longtime now.
  3. Let the dough rest for 1 hour. Make small balls and roll to flat circle and toast on hot tava.
Note:
You make variations by adding different flours. But maintain the same ratio.

Vendhaya keerai Parrupu Chapati/Roti

I usually do methi chapati/ roti, just by mixing fresh methi leaves in wheat flour. When I was reading an article I came across adding parrupu for chapati. Just gave a try and it came out good. Vendhayam is one of the cooling agents and this vendhaya keerai is so good for health. By doing like this we can add greens and proteins for kids meal, no need to worry they take dal separately.

Ingredients:



Wheat flour
1 cup
Vendhya keerai ( fenugreek leaves)
1 hand full
Mustard seeds
1 tsp
Split chana dal (kadalai parrupu)
2 Tbsp
Moong dal (Pasi parrupu)
2 Tbsp
Sugar
½ tsp
Oil
2-3 Tbsp
Curd
1 Tbsp
Salt
 
 
 
 
 

 
 

Direction:

  1. Dry roast both dal separately and make fine powder once they cool.
  2. With a teaspoon of oil splutter mustard seeds, add vendhaya keerai and sauté for few minutes or until they cook (approximately 5-7 minutes).
  3. Allow it to cool and grind to fine paste.
  4. In a bowl mix wheat flour, salt, sugar, dal powders, curd and vendhaya keerai paste. Add enough water for kneading and make a soft dough as our regular chapati/ roti dough.
  5. Add oil and mix gentle, don’t knead too much now. Let it rest for half an hour.
  6. After that divide the dough into small balls and roll to circle shape roti and toast on hot tava.

Oats Roti

Oats is very low in cholesterol and good in fiber. I use to take this regularly for breakfast but after my pregnancy I couldn’t able to eat oats as like before, even my kids and husband also not eating. It was sitting in my pantry for longtime so started to try different foods and finally adding oats in our menu. After couple of tries, oats roti turned out good so thought of sharing this here.

Ingredients:



Oats
1 cup
Wheat flour
1 cup
Water
For kneading
Oil
2 Tbsp
Sugar
A pinch
Salt
 
 
 
 

 
 

Directions:


  1. Dry roast oats until nice aroma, allow it to cool and grind to fine powder.
  2. In bowl whisk wheat flour, oats flour, salt and sugar add water little by little and knead that to soft dough (approximately it took little less than 1 cup).
  3. Now add oil and knead again with less pressure and allow to rest in air tight container for 2-3 hours.
  4. After 2-3 hours, make small balls and roll that as regular roti and toast on hot tava.

 
 
 

Tips:

  • To get soft roti after your tava turns super hot turn that to medium temperature, tava should be even all time.
  • No need to flip often, when you see small bubbles just flip to other side it will start to bubble on other side too. Just remove from tava. It will take 1-2 minutes approximately.
  • Transfer to hot pack or in a closed container.
