Today’s recipe is simple and easy once Shezwan Noodles. I
usually feel guilty to pack noodles or pasta for lunch but kids always love
these for lunch. Even my little one asks mac and cheese for lunch box. I love
the taste of hakka noodles, now days I am not using spaghetti.
Ingredients:
Hakka Noodles

1 pack

Carrot (chopped
lengthwise)
|
½ cup
|
Cabbage (chopped
length wise)
|
¾ cup
|
¼ cup
|
|
French cut beans
|
¼ cup
|
Onion
|
¾ cup
|
Tomato paste
|
1 ½ Tbsp
|
Szehwan sauce
|
2 Tbsp
|
Soy sauce
|
1 tsp
|
Spring onion
|
¼ cup
|
Salt
|
|
Oil
|
Directions:
- Cook hakka noodles by following package instructions.
- Heat oil in a fry pan, add onion and sauté for 1 minute, next add all vegetables except cabbage and spring onion. Saute them for few minutes, now add cabbage enough salt for vegetables.
- Cook all the vegetables until soft. In this stage add tomato paste, mix well wait for a minute. Next add shezwan sauce and soy sauce mix well.
- Next add cooked noodles and spring onion stir until its mixed well. Turn of the stove. Serve with tomato ketchup.
How to make Shezwan sauce:
In a pan heat 2 tablespoon of oil, add 1 tablespoon chopped
garlic, sauté it for few minutes. Next add 2 tablespoon chili pastes (soak red
chili in water and grind to paste by removing seeds), cook until raw smell
leaves. Add ½ tsp soy sauce, 1 tsp vinegar, 1 tsp tomato ketchup mix well and sauté
for another minute. Next add salt, ¼ cup water and 1 tsp brown sugar mix well
and cook for a minute turn of the stove. Sauce is ready to use now.
Notes:
- Adding vegetables is your choice you can increase or decrease the quantity; I use to add more in that way kids get more veges. You can use different noodles too.
- If you need spicier add more chili paste, while preparing shezwan sauce.
- You can add garam masala while adding shezwan sauce to noodles its optional I use to add some time. This gives Indian touch.
- Instead of tomato paste you can add tomato pure when adding tomato paste it give nice color.
Who can resist these noodles and I am sure kids would love this!
