Ingredients:
Aval (poha)

1 cup

Onion chopped
|
½ cup
|
Carrot shredded
|
½ cup
|
Peas
|
¼ cup
|
Dry red chili
|
1-2
|
Coriander leaves
|
few
|
Curry leaves
|
few
|
Mustard seeds
|
1 tsp
|
2 tsp
|
|
Urad dal
|
1 tsp
|
Pepper powder
|
1 tsp
|
Ginger chopped
|
½ tsp
|
Salt
|
|
Oil
|
Directions:
- Soak aval for 10 -15 minutes.
- Heat oil in a pan, Splutter mustard seeds, chana dal, urad dal, add onion,ginger and curry leaves and sauté for few minutes.
- Once the onion turns light brown add carrot and peas, cook until it turns soft add aval after draining all water.
- Add salt and pepper and and mix well and turn off the stove and garnish with coriander leaves.
Note: I used brown aval you can use the regular one too. You can use thick or thin poha only the soaking time differs.
